Steps
- 1Pressure cook broken wheat, chana dal, urad dal, moong dal, mutton, ginger, garlic, and salt. Add water as needed and close the cooker.
- 2Cook for 5-6 whistles. Reduce heat and cook for another 5 minutes. Turn off heat and let the pressure release naturally.
- 3Open the cooker and remove the mutton pieces. Let them cool. Once cool, shred the mutton from the bones and set aside.
- 4Grind the cooked mixture into a paste using a food processor. Set aside.
- 5Heat ghee in a pan. Add saffron, green chili, red chili powder, turmeric powder, coriander powder, cumin powder, and chaat masala. Mix well.
- 6Add the cooked dal and mutton, mix well. Cook for 3-4 minutes. Turn off heat and transfer to a bowl. Let it cool.
- 7Once cool, add gram flour and mix well. Grease your hands with oil and shape the mixture into round kebabs.
- 8Heat a tawa (griddle). Add a little ghee and place the kebabs on it. Cook until golden brown on both sides. Serve.
- 9Serve Haleem ke Kebab with coriander-mint chutney and thinly sliced onions.
