Steps

  1. 1To make Bharwa Karela, first peel the bitter melon. Now make a slit in the middle. Remove the seeds from it and keep aside.
  2. 2Apply salt on the bitter melon. Add 1/2 tsp salt to the bitter melon seeds and keep aside for 1/2 hour.
  3. 3Squeeze out the water from the bitter melon and dry them with kitchen tissue.
  4. 4Now in a mixer grinder, add the spices given for grinding and make a paste.
  5. 5Now heat a pan and add all the dry spices except coconut. Roast them and then grind in a mixer grinder with coconut.
  6. 6Now heat a little oil in a pan. Once the oil is hot, add the ground paste and bitter melon seeds.
  7. 7After 1 minute, add the dry roasted spices, Kashmiri red chili powder, salt and garam masala powder. Let it cook for 8 to 10 minutes. Turn off the gas.
  8. 8Fill a spoonful of the spice mixture into the bitter melon. Fill all the bitter melons like this and keep aside.
  9. 9Heat a little oil on a tawa (griddle). Place the bitter melon on it and cook until browned on all sides. Cover the pan and cook until the bitter melon is well cooked.
  10. 10Serve the Bharwa Karela with panchmel dal and phulka for lunch.
