Steps

  1. 1Clean and wash the chicken breast and cut into small to medium sized pieces. If using legs, keep them whole.
  2. 2Into a pressure cooker, add the chopped spinach leaves, green chillies, and 2 tablespoons water. Pressure cook for 1 whistle and turn off the heat.
  3. 3Release the pressure immediately by running the cooker under cold water. Open the cooker and allow the spinach to cool. This helps the spinach retain its green colour.
  4. 4Once the spinach cools, place it in a mixer grinder and make a puree. Set the spinach puree aside.
  5. 5Heat a heavy-bottomed pan with ghee. Add ajwain, cloves, cinnamon, and cardamom. Sauté for about 10 seconds.
  6. 6Add the ginger, garlic, and onions. Sauté until the onions turn translucent. Add the chicken, salt, red chilli powder, and garam masala powder. Stir to combine.
  7. 7Cover the pan and cook the chicken on low heat until it is cooked completely. Sprinkle a little water if required and cook until done.
  8. 8Finally, pour in the spinach puree and cream. Mix everything well and let the Palak Chicken simmer for 4 to 5 minutes until the gravy thickens.
  9. 9Once the Saagwala Chicken is done, check the taste and adjust the salt accordingly.
  10. 10Serve the Saagwala Chicken along with Burani Raita, Butter Garlic Naan, or Kachumber Salad for a complete meal.
