Steps

  1. 1Bring a pot of water to boil and cook the pasta as per instructions.
  2. 2Season the salmon generously with the salt free lemon pepper seasoning.
  3. 3Thinly slice the spring onions. Cut the okra into 1 cm pieces. Slice the capsicums. Trim and half the snow peas. Finely chop the garlic chives. Crush the garlic. Zest the lemon.
  4. 4Heat a drizzle of oil in a frying pan on high heat. Cook the salmon on each side, including the edges, until browned. Set aside and keep warm.
  5. 5Place the frying pan back on the stove and add the onion, okra, and snow peas with a drizzle of olive oil, crushed garlic and lemon zest. Reduce the heat to medium. Place the lid on and cook for 4-5 mins, stirring occasionally.
  6. 6Remove the lid and add the capsicum, and cook until the vegetables have softened.
  7. 7Drain the pasta and add to the pan. Increase the heat back to high, add the coconut amino acid and stir fry for another 2-3 minutes.
  8. 8Flake the salmon with a fork and carefully mix into the pasta. Serve and enjoy!
