Steps

  1. 1Quarter the potatoes, place them in a pot and cover them with cold water.
  2. 2Bring the water to a boil and cook them for 15-20 minutes, or until they’re tender when pierced with a fork, but not falling apart.
  3. 3You don’t want them so soft that they mash when mixing them into the salad.
  4. 4Put the peeled, whole potatoes in the bottom of the Instant Pot with 2 cups of water.
  5. 5Lock the lid and make sure the valve is in the sealing position.
  6. 6Cook on high pressure for 3 minutes.
  7. 7When the cook time is finished, quick release the pressure and carefully move the cooked potatoes to a cutting board.
  8. 8Dice the potatoes evenly (about 1/2 inch cubes) while they are warm.
  9. 9Whisk together the olive oil, vinegar, lemon juice, mustard, sugar, salt and tabasco sauce in a large bowl and toss the potatoes in the marinade.
  10. 10Refrigerate until cold, about 1-2 hours.
  11. 11Once the marinated potatoes are cold, add the eggs, celery, green onions, pepper and mayonnaise.
  12. 12Stir gently to combine everything.
  13. 13Chill the salad for at least one hour, and sprinkle with paprika before serving.
