Steps

  1. 1Preheat oven to 400 degrees and line a sheet pan (with raised edges) with parchment paper.
  2. 2Make the Herby Goat Cheese
  3. 3Add the goat cheese, fresh rosemary, fresh thyme, and lemon zest to a small bowl. Stir together until well combined and set aside.
  4. 4Prep the Dates
  5. 5Cut a slit into the dates, lengthwise, being sure not to cut the dates all the way through. Remove the pit.
  6. 6Prep the Hot Honey Glaze
  7. 7Add the hot honey and a pinch of kosher salt and pepper to a small bowl. Stir until well combined.
  8. 8Prep the Bacon
  9. 9Slice the bacon in half.
  10. 10Assemble the Dates
  11. 11Stuff each date with a teaspoon or so of goat cheese. Then, wrap the half slice of bacon around each date and place on the lined sheet pan.
  12. 12Use a pastry brush to brush each of the dates with the hot honey glaze. You won’t use it all so reserve the rest for after the dates have baked.
  13. 13Bake the dates at 400 degrees for 15 to 20 minutes or until the bacon is crisped.
  14. 14Remove from the oven and brush the remaining glaze over the dates. Serve warm, garnished with additional fresh herbs, and flaky salt.
