Ingredients: 1 lb Whole Turkey (1 pound (454 g) ground turkey); ½ tsp Garlic Powder (1/2 teaspoon garlic powder); ½ tsp Onion Powder (1/2 teaspoon onion powder); 1 tbsp Chili Powder (1 tablespoon chili powder); 2 tsp Cumin Seeds (2 teaspoons cumin); 2 tsp Ground coriander (2 teaspoons ground coriander); ½ tsp Table Salt (1/2 teaspoon salt); ½ tsp Black Pepper (1/2 teaspoon pepper); ¾ cup Tomato Sauce (3/4 cup tomato sauce); 2 ½ cup Cheddar Cheese (2 1/2 cups shredded cheddar cheese)

Steps

1In a large skillet over medium heat, brown the turkey.
2Stir in the garlic powder, onion powder, chili powder, cumin, coriander, salt, pepper, and tomato sauce.
3Bring the sauce to a boil over medium heat and then lower the heat and let it simmer for 5 minutes, stirring occasionally.
4Wrap the tortillas in damp paper towel and heat them in the microwave on full power for 45-60 seconds.
5Spoon the meat mixture onto a warm tortilla, about 2 tablespoons per tortilla.
6Sprinkle shredded cheese on top of the meat, and then roll up the tortilla around the filling. If your tortilla cracks, heat the remaining tortillas a little more before continuing to fill them.
7Place the taquito seam side down so it doesn’t unroll, and repeat with the remaining tortillas.
8Spray the basket of your air fryer with cooking spray. Preheat the air fryer to 400 degrees F.
9When your air fryer is hot, place the taquitos in the basket in a single layer, seam side down, and spray the tops with cooking spray. Depending on the size of your air fryer you will need to do several batches to cook them all. I could fit about 8 in my air fryer at a time.
10Cook the taquitos in the air fryer for 6-8 minutes, flipping them once, or until they are crispy and the cheese is melted.
11Serve with salsa, sour cream, and guacamole.
12Air fryer taquitos can be frozen in an airtight container for up to 3 months. Reheat them from frozen in the air fryer at 400F for 4-5 minutes, or until they’re heated through and crispy.
