Steps

  1. 1Preheat the oven to 350 degrees F. Line a muffin tin with paper liners, or spray it lightly with non-stick cooking spray and set aside.
  2. 2In a large bowl, stir together the wheat bran, bran cereal, and boiling water. Set aside until it cools to room temperature, about 15-20 minutes.
  3. 3In another large bowl, whisk together the oil, sugar, eggs, and molasses. Add the buttermilk and whisk everything together.
  4. 4In another bowl, whisk together the flour, baking soda, and salt. Stir in the raisins.
  5. 5Once the bran mixture has cooled down, add it to the buttermilk mixture, and stir until well combined.
  6. 6Add the flour mixture and stir just until everything is combined.
  7. 7At this point you can either bake the muffins, or refrigerate the batter in a sealed container (or two) for up to one month.
  8. 8To bake the muffins, fill the prepared muffin cups 3/4 full, and bake for 18-22 minutes, or until a toothpick inserted in the centre of a muffin comes out clean.
  9. 9Let the muffins cool completely, and then store them in a sealed container at room temperature for up to 3 days, in the fridge for up to 5 days, or freeze them for up to 3 months.
