Steps

  1. 1Preheat the oven to 325 degrees F.
  2. 2Line an 8x8 inch baking dish with foil or parchment paper and spray it with non-stick cooking spray.
  3. 3In a large bowl, whisk together the melted butter, peanut butter, salt and baking soda.
  4. 4Add the brown sugar and granulated sugar and mix well.
  5. 5Whisk in the egg and vanilla.
  6. 6Add the flour and graham cracker crumbs and stir until just combined.
  7. 7Stir in 1/2 cup of the chocolate chips.
  8. 8Spread the dough in the prepared pan, as evenly as possible. It will be sticky.
  9. 9Bake the bars for 23-25 minutes, or until they are golden brown and middle is just set.
  10. 10Take the pan from the oven, sprinkle the mini marshmallows and the remaining 1/4 cup of chocolate chips over top of the bars, and return them to the oven..
  11. 11Turn the broiler on low and broil for 2-3 minutes, watching carefully, until the marshmallows are golden brown.
  12. 12Remove the bars from the oven and allow them to cool completely before removing them from the pan.
  13. 13Slice the bars into squares (a long, serrated knife works best for this), and store them in an airtight container at room temperature for up to five days.
