Steps

  1. 1Line a rimmed 12x16 inch baking sheet with wax paper and set aside.
  2. 2In a large bowl, toss together the oats, Cheerios, and peanuts.
  3. 3In a medium saucepan, over medium heat, combine the honey and sugar.
  4. 4Heat, stirring, until the mixture comes to a full rolling boil. Continue boiling for one minute, stirring constantly.
  5. 5Turn off the heat and add 2 cups of peanut butter and the vanilla, stirring until the peanut butter has melted and the mixture is smooth.
  6. 6Pour the peanut butter mixture over the oat mixture and stir until it is evenly combined.
  7. 7Spread the mixture on the prepared baking sheet and press it down. Cover with another piece of wax paper, and use a rolling pin or a flipper to press the bars down into an even, compact layer.
  8. 8Refrigerate the bars for an hour before adding the chocolate layer.
  9. 9In microwave safe bowl, heat the chocolate chips and 1/4 cup peanut butter in the microwave at 50% power for 3-4 minutes, stirring every 30 seconds until the chocolate is melted and smooth.
  10. 10Spread it over top of the chilled bars and sprinkle the Reese’s Pieces candy and the sprinkles over top.
  11. 11Refrigerate the bars again, for at least two hours, and then cut into bars and store in an airtight container in the refrigerator for up to two weeks. They also freeze well for up to 3 months.
