Steps
- 1Preheat the oven to 425 degrees F.
- 2Lightly spray a 12 cup muffin tin with non-stick cooking spray or line it with paper liners. Set aside.
- 3In a medium bowl, whisk together the melted butter, sugar, buttermilk, eggs, and vanilla until smooth and well combined.
- 4In a large bowl, stir together the flour, baking powder, baking soda, and salt until combined.
- 5Make a well in the dry ingredients and pour in the wet ingredients.
- 6Stir until just combined. Don’t over-mix the muffin batter or you will have dense muffins.
- 7Fold in the cherries and chocolate chips.
- 8Divide the muffin batter between the 12 muffin cups. I like to use a large ice cream scoop for this. The muffin tin will be quite full.
- 9Bake for 5 minutes, then lower the oven temperature to 350 degrees F, and continue baking for another 14-16 minutes, or until a toothpick inserted in the centre of a muffin comes out clean.
- 10Let the muffins cool in the pan for 5-10 minutes and then remove them to a wire rack to cool completely.
- 11Store at room temperature for up to 3 days, or freeze the muffins for up to 3 months.
